SEMI-BOONLESS CHICKEN
WITH LIME TEQUILA MARINADE AND RD PEPPER MARMALADE
Ingredients
1 EACH WHOLE CHICKEN
1 CUP LIME TEQUILA MARINADE
1 CUP RED PEPPER MARMALADE
LIME-TEQUILLA MARINADE
1/4 CUPS LIME JUICE, FRESH SQUEEZED
1/4 CP Tequila
1/4 CUP olive oil
1/4 CUP triple sec
1 CLOVES GARLIC
1/2 TSP salt
1/2 TSP pepper, freshly ground
Instructions
1 DEBONE CHIDKEN AND RINSE WELLUNDER COLD RUNNING WATER
2 MAROMATE CHICKEN IN LIME-TEQUILLA MARINADE FOR 8 HR. OR OVER NIGHT
3 WHEN READY TO COOK, GRILL CHICKEN OVER MEDIUM HEAT ON A WELL-OILED GRILL. BE SURE TO START COOKING THE SKIN SIDE FIRST. STRETCH SKIN WHEN PLACING BIRD ON GRILL TO INSURE THAT IT CCOOKS EVENL AND THAT THE SKIN BECOMESPROPERLY CRISP.
4 WHEN SKIN IS GOLDEN BROWN AND NICELY MARKED BY THE GRIL, TURN CHICKEN OVER AND CONTINUE COOKING UNTILL CHICKEN IS DONE.
5 WHEN CHICKEN IS DONE, REMOVE FROM GRIL AND SERVE WITH RED PEPPER MAMALADE.
6 YIELD: 3 TO 4 PORTIONS, DEPENDING ON SIZE OF CHICKEN.

1 COMBINE ALL INGREDIENTS IN BLENDER
2 MIX ON HIGH SPEED
3 USE TO MARINATE CHICKEN OR FISH BEFORE GRILLING
