Shrimp & Avocado Ceviche - TastyPlanner.com

Perfect on a summer afternoon with a margarita!
Ingredients
1 pound medium shrimp, peeled and deveined
2 Tbsp sea salt
1/4 cup fresh orange juice
1/4 cup lemon juice
1/4 cup lime juice
1/4 cup Tequila
1 cup RED ONION, FINELY CHOPPED
1 Jalapeno, minced
1 Red Bell Pepper, peeled diced
1 Avocado, cut into 1/2-inch chunks
Instructions
Bring to a boil 4 quarts of water and sea salt. Add the shrimp and cook for about 30 seconds. Promptly poor shrimp into a colander and rinse with cold water.
Cut each piece of shrimp into halves or thirds, you can also leave some whole. Place shrimp into bowl, add Tequila, orange and lemon juice. Cover and refrigerate for a half hour.
Combine red onion, jalapeno and bell pepper; combine with shrimp and juices. Refrigerate for a half hour or up to 24 hours.
Right before serving add avocado.
