This is a a classic Italian dish with a lemon and white wine sauce. This dish also goes great on top of spaghetti.
Ingredients
1 lb Peeled Shrimp
salt
fresh ground pepper
2 large eggs
1/2 Cup flour
1/2 Cup chicken broth or shrimp broth
1/4 Cup dry white wine
3 Tbsp olive oil
3 Tbsp unsalted butter
3 Tbsp lemon juice
1 Tbsp Flat leaf parsley
Optional: Linguine
Instructions
Season shrimp with lightly with salt and pepper.
Crack eggs in shallow bowl, & season lightly with salt and pepper. Beat eggs till well blended.
Spread flour on plate.
Mix together broth, wine, and lemon juice in another bowl.
Heat olive oil and butter in a large skillet over medium heat until slightly sizzling. First dip Shrimp in the flour mix. Next dip flour covered shrimp in dip in egg mixture. Next, place battered shrimp in the pan. Add the shrimp to the pan and saute them slowly until golden brown.
When shrimp is cooked, remove them from the pan and set aside in a bowl/plate. With pan still hot and the burner still on, add broth, wine, and lemon juice mixture to the pan. Raise heat, and scrape bottom of pan. The sauce should thicken slightly due to the shrimp batter/flour that broke off when cooking the shrimp. Stir in parsley. Return shrimp to skillet in sauce. Turn the shrimp once or twice in sauce.
Optional: Serve over Linguine.
