Shrimp Scampi - TastyPlanner.com

Shrimp sautéed in a lemon, butter, garlic sauce.
Ingredients
1 pkg Angel Hair Pasta
1 lb shrimp
1 Lemon
2 tbl. spn. extra virgin olive oil
1 package mushrooms, chopped
2 lg. cloves of garlic, minced
2 tbl spn. butter
2 Roma tomatos, diced
Instructions
Cook pasta according to package directions.
In a sauté pan warm olive oil and add minced garlic, shrimp and the zest of the lemon along with its juice.
Once the shrimp are fairly pink add butter, and mushrooms.
Once the mushrooms are tender add the tomatoes. Once tomatoes are warmed, server over angel hair pasta.
