Shrimp with Spinach Pasta and Feta Cheese Sauce - TastyPlanner.com

Ingredients
2 tablespoons olive oil
1 pound of shrimp, peeled, deveined and tails removed.
5 cloves of garlic, minced
½ cup white wine
1 pound of spinach pasta
10 cherry tomatoes, quartered
½ cup fresh chopped oregano
½ cup fresh chopped basil
2 handfuls of fresh baby spinach
8 ounces crumbled garlic and herb feta cheese
½ cup heavy cream
Instructions
1. In a 10 inch skillet over medium heat, heat 2 tablespoons of olive oil. Cook shrimp, garlic and white wine for 5 minutes or until the shrimp is pink. Remove the shrimp with a slotted spoon and set aside.
2. Bring a large pot of lightly salted water to a boil. Add pasta and cook until al dente, drain.
3. While the pasta is cooking, cook tomatoes, fresh spices and spinach in the remaining wine until the spinach has wilted. Add heavy cream and stir until thickened. Add the cheese and stir until fully melted and the sauce is creamy. Return shrimp to the pan for 2 minutes.
4. Serve the shrimp and sauce generously over the noodles.
