Risotto with olives & capers

Ingredients
200 gram of arborio rice
2 1/2 tablespoon of butter
1 onion chopped fine
1 clove of garlic
1 red chili pepper, de-seeded and finely chopped
1 teaspoon of dried oregano
250 ml of chicken stock
50 ml of dry white wine (optional)
200 ml chopped tomatoes (canned)
2 tablespoons of pitted black olives, coarsely chopped
1/2 teaspoon capers, drained
Instructions
Heat 2 tablespoons of butter in a large wide pan, saute the onion, garlic, pepper and oregano for 3-5 min on a low heat. Add the rice and heat through until the rice is shiny and translucent.
Add the chicken stock, (white wine optional) and tomatoes to the rice and bring to the boil while stirring. Cook de rice covered for about 12 minutes until the rice al dente and almost all the liquid has dissappeared.
Take the rice of the heat and stir in the remaining butter and season to taste with salt & pepper. Garnish with the olives & capers.
