Obviously you don’t have to stack these items if you’re not into mixing flavours, but it makes a pretty presentation. I wasn’t in charge of the meat or potatoes, but I’m sure you can find recipes for perfect mashes elsewhere.

Ingredients
1 beef eye fillet
5-6 sprigs lemon thyme, coarsely chopped
worcestershire sauce for marinating
2 medium- to large-sized potatoes, peeled & roughly chopped
butter
milk
salt & pepper to taste
3 large silverbeet (swiss chard) leaves, chopped roughly
2 Tbsp butter
2 Tbsp pine nuts
1 Tbsp currents
1 Tbsp verjuice or lemon juice
Instructions
Marinate eye fillet in worcestershire sauce & lemon thyme for about an hour prior to cooking. Slice into inch-thick pieces and pan fry to desired done-ness.
Boil potatoes until soft & mashable. Add milk to desired consistency and butter, salt & pepper to taste. (I like my mash wet and buttery, but others like it dry and bland… so this one is up to you.)
Steam silverbeet over boiling water for 2-3 minutes or until wilted. Combine butter, pinenuts, currents & lemon or verjuice and mix with silverbeet.
To serve, place 2-3 pieces of meat on the center of plate. Top with mashed potatoes and follow with silverbeet mixture.
