Simple Chicken Fajitas - TastyPlanner.com

These fajitas make a delicious and filling one-dish meal with minimal fuss.
Ingredients
2 boneless skinless chicken breasts (about 1 pound)
1 green bell pepper, sliced
1 red bell pepper, sliced
1/2 yellow onion, sliced
1 tsp. ground cumin
2 tsp. ground oregano
4 cloves garlic, minced
2 tbsp. olive oil
1 package tortillas
Instructions
1. Trim the chicken breasts and cut into 1/4-inch wide strips.
2. Season the chicken with salt, pepper, cumin and oregano. Add cayenne pepper to taste.
3. Heat the olive oil in a large pan. Add the garlic and onions once the oil is hot and allow to caramelize.
4. Add the chicken and cook, stirring frequently.
5. Once the chicken is half cooked, add the green and red bell peppers, and jalapeño or anaheim pepper slices if desired. Continue cooking until chicken is cooked thoroughly and bell peppers soften.
6. Spoon the fajita mixture into warmed tortillas. Add toppings such as lettuce, tomato, salsa, sour cream and cheese to taste.
