Simple (Traditional) Irish Stew - TastyPlanner.com
Chef: Eggplantpasta
This is the basic, traditional, Irish stew recipe. You can experiment by adding things such as rosemary, thyme, garlic, other vegetables, an apple or substitute the lamb for beef etc. But remember to keep the recipe simple.

Ingredients
2 large onions
4 large carrots
1 parsnip
1 kg chops, neck, or shanks of lamb or mutton (bones included)
6 large potatoes
handful of fresh parsley (chopped)
salt & pepper to taste
Instructions
Peel and roughly chop vegetables into large chunks.
Cut meat into similar sized pieces leaving on fat and bones.
Add all to a large stock pot, fill with water so not quite covering ingredients, and cook covered for 60 minutes or until meat and potatoes are very tender.
Add a couple of teaspoons of cornflour mixed to a paste to thicken if desired.
Serve with buttered bread for dipping.
