Slow Roast Tomato Salad - TastyPlanner.com

Ingredients
6 tomatoes, halved
2 cloves garlic, finely sliced
1 teaspoon honey
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1 tablespoon chopped flat leaf parsley
1 extra balsamic vinegar, to drizzle
1 olive oil, to drizzle
Instructions
1. Preheat oven to 150ºC/300ºF/gas 2.
2. Place tomato halves cut side up in an oven tray.
3. Place a garlic slice on top of each half.
4. Drizzle over honey, vinegar and oil.
5. Sprinkle with salt and pepper.
6. Roast until very soft and lightly charred, approx 1 hour.
7. Sprinkle with parsley and drizzle with oil and vinegar.
8. Serve chilled or at room temperature; I think it is better at room temperature You can roast the tomatoes up to 1 day in advance and cover and refrigerate.
