Slow-Roasted Beef with Creamy Mashed Potatoes - TastyPlanner.com
Chef: Who's ya sista?
This is to date the best pot roast I have ever had!
Ingredients
Beef:
3 pound beef chuck roast
1 package of french onion soup mix
4 tablespoons dried or fresh rosemary leaves
1/2 cup of water
Coarse salt & fresh ground pepper
Potatoes:
8 large potatoes, peeled and diced
1 cup sour cream
1 stick of butter
Salt and pepper to taste
Instructions
Beef: Combine all ingredients in slower cooker for beef. Cook on low for 6 hours.
Potatoes: Take all liquid from beef, strain to remove solids. Add all liquid to raw potatoes and extra water if needed, boil. Drain potatoes reserving 1/4 cup of cooking broth. Combine potatoes, reserved cooking broth, sour cream, butter and salt and pepper and mash.
Serve roast over potatoes.
