Smashed Potatoes and Cream Cheese - TastyPlanner.com

Ingredients
2.5 lbs small red or baby Yukon gold potatoes
1/2 cup half-and-half
8 oz plain or veggie cream cheese, cut into pieces
10 chives or 2 scallions, chopped
Salt and pepper to taste
Instructions
1. Place potatoes in a pot of water over high heat and boil until tender, about 15 minutes.
2. Drain potatoes and return to the pot to dry out a bit.
3. Mash potatoes with half-and-half.
4. Add cream cheese and smash until cheese melts.
5. Top off with chives/scallions and season with salt and pepper.
