Great simple snow candy.
Ingredients
2 1/2 cups white sugar
1/2 cup light corn syrup
1/2 cup water
1 dash of salt
2 egg whites
1 teaspoon vanilla
1 cup chopped nuts
Instructions
1. In a saucepan mix sugar, corn syrup, water, and salt. Boil to medium ball stage (240°F).
2. Pour half the mixture slowly over the stiffly-beaten egg whites, beating constantly.
3. Cook remaining syrup to very-hard ball stage (265°F).
4. Beat syrup into the egg whites and continue to beat until mixture holds it’s shape.
5. Add vanilla and nuts.
6. Drop from teaspoon onto greased cookie sheet.
Makes 5-6 dozen candies.
