This sauce is a basic Puerto Rican pepper sauce. The recipe is by Elsie Ramos. Add a tablespoon of the sauce to your soups, stews, grilled meats, etc.

Ingredients
2 large Spanish onions, peeled and quartered
1 large green bell pepper, seeded and quartered
1 large red bell pepper, seeded and quartered
1 bunch cilantro leaves (the more the merrier)
2 heads garlic, separated into cloves and peeled
Instructions
Combine all of the ingredients in a food processor fitted with a steel blade. Process until well blended. The sofrito should have the consistency of tomato puree. Transfer to a glass or plastic container, cover, and store in the refrigerator for up to 4 weeks.
