Cake, for breakfast!
Recipe Source: adapted from Better Homes a...
Ingredients
Cake:
1 cup butter
2 cups granulated sugar
2 eggs
1 8-ounce carton sour cream
½ teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
¼ teaspoon baking soda
Topping:
½ cup chopped nuts
3 tablespoons brown sugar
2 tablespoons granulate sugar
2 teaspoons ground cinnamon
1 teaspoon grated nutmeg
Instructions
Preheat the oven to 350 degrees. Grease a 13×9×2-inch baking pan; set aside.
To make the cake: In a large mixing bowl, cream together the butter and the 2 cups of sugar with an electric mixer on medium speed. Add the eggs, sour cream and vanilla; beat for 1 minutes more.
In a small bowl, stir together the four, baking powder, salt and baking soda. Add the flour mixture to the sour cream mixture. Beat with the mixer on low speed for 2 to 3 minutes or until all the ingredients are combined.
To make the topping: In another small bowl, stir together the nuts, brown sugar, the 2 tablespoons sugar, cinnamon and nutmeg.
Pour half of the batter into the prepared baking pan. Sprinkle half of the topping over the batter in the pan. Spoon the remaining batter into the pan, spreading it slightly over the first layer of topping. Sprinkle the remaining topping over all.
Bake the coffee cake in the 350 degree oven about 35 minutes or until a wooden toothpick inserted near the center comes out clean. Cool slightly before serving.
