Ingredients
1/4 lbs of spaghetti
4 eggs
1/2 cup plus 2 tbls of Parmesan (apprx. 3 oz)
kosher salt
black pepper
Instructions
Cook pasta according to package directions. Reserve 1.2 cup of the cooking water. Drain the pasta and return it to the pot.
Crack eggs into skillet; cook until the whites are about to set but yolks are still runny, 3-4 minutes.
Toss pasta with 1/2 cup of parm, 1/2 tsp of salt, 1/4 tsp of pepper and reserved pasta water.
Divide the pasta among bowls and top with eggs. Sprinkle with remaining parm.
