Ingredients
6 boneless, skinless chicken thighs
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon dried oregano
salt and pepper
½ pound cooked chorizo, sliced ½-inch thick
1 onion, chopped
Half of a red bell pepper, chopped
1½ cups white rice
¾ teaspoon turmeric
2½ cups chicken broth
1 can (14.5 ounces) diced tomatoes
¾ cup frozen peas
Instructions
1.Toss the chicken with 1 tablespoon oil and the paprika, oregano and garlic. Season with salt and pepper. In a large, deep skillet over medium-high heat, cook chicken, turning once, until browned, about 6 minutes total. Remove from the pan.
2.In the same skillet over medium-high heat, cook the sausages and the remaining 1 tablespoon oil until browned, 2 to 3 minutes. Add the onions and peppers and cook until the vegetables are tender, about 4 minutes longer. Stir in the rice and turmeric. Add the broth, tomatoes and chicken and bring to a simmer. Reduce heat to low; cover and cook until most of the liquid has been absorbed, 15 minutes. Stir in the peas, then cover and remove from the heat. Let stand a few minutes before serving
