Spicy Basil Chicken - TastyPlanner.com

This is a quick easy stir-fry.
Ingredients
2 Tbsp Peanut Oil
1 lb Ground Chicken
2 Shallots halved and thinly sliced
2 cloves garlic minced
1 cup Thai holy basil (or Thai Basil) leaves and buds with tender stalk
10 Thai Green Chillis thinly sliced (deseeded if you like less spicy)
Dash of White pepper
Instructions
Heat oil in a wok until it swirls easily. Fry the garlic for a few seconds until it is lightly colored. Add the shallots and fry quickly until they are soft. Add the ground chicken and stir quickly until it loses the pink color. Add the fish sauce around the side so it doesnt cool down the meat too quickly. Add the dark soy sauce similarly. Keep stirring. Add the chillis. Keep frying. Add the basil and cook until it wilts. Take it off the heat and sprinkle with the pepper. Serve immediately with Jasmine or other long-grained fragrant rice.
