Ingredients
2 Cans kidney beans
1 can chopped tomatoes
1/2 large chopped onion
1/2 tbsp olive oil
1 celery stick, finely chopped
1/3 cup tomato paste
1 1/2 tsp ground cumin
1/2 tsp chilli powder
pinch oregano
2 tsp soy sauce
1/2 tsp sugar
squeeze lemon juice
45g tortilla chips per person
50g edam cheese, grated
lite sour cream
Salsa:
1 cup chopped tomato
1/2 cup chopped, peeled cucumber
1/2 chopped avocado
handful chopped coriander
dash sweet chilli sauce
squeeze lemon juice
Instructions
Mash or process half the beans and add the chopped tomatoes. In a saucepan gentl fry the onion in the oil, add the spices and stir in the tomato and bean mixture, tomato paste, say sauce, sugar, lemon juice and remaining beans. Simmer gently til needed.
While onions cooking , assemble the salsa and set out the plates.
Place a serving of chips on each plate, sprinkle with cheese and melt under the grill. Spoon on serving of the bean mix, add sour cream and top with salsa.
Serve with mixed salad.
