Spinach Pepperoni Quiche
Ingredients
15 oz. container)
1/2 cup grated Romano or Parmesan cheese
2 eggs, beaten
1/2 tsp salt
1/2 tsp black pepper, to taste
1/2 stick pepperoni, cut into small cubes
2 (10 oz.) packages frozen chopped spinach, cooked & drained
1 (9 inch) unbaked shell
Instructions
Blend together ricotta, Romano, eggs, salt, and pepper. Stir in pepperoni. Squeeze excess water out of spinach. Stir into cheese mixture. Spoon and spread filling evenly in pie shell. Bake at 350 degrees for 45-60 minutes, or until crust and filling are lightly browned. Makes 6-8 servings.
