Spinach with sesame dressing Japanese style

Ingredients
2 bunches English spinach
6 tbsp white sesame seeds
6 tbsp sugar
6 tbsp soy sauce
Instructions
Cook whole bunches of spinach in a large saucepan of boiling water
for 1-2 minutes until just tender. Remove and rinse under cold water. Remove excess water and discard root ends. Cut into 5cm lengths and place in a bowl. For dressing, roast sesame seeds in
a small dry frying pan, stirring, for 1-3 minutes until aromatic, then grind in a mortar and pestle. Combine seeds with sugar and soy sauce and stir until sugar is dissolved. Pour over spinach and toss gently to combine.
