Split Pea Soup
1 pound dry split peas ; washed
7 cups water
1 carrot ; diced
1 onion ; diced
salt and pepper
Wash the split peas, looking carefully for any stones. Put the 7 cups (approximate) of water and the washed peas in a large pot and bring to a boil. Reduce the heat to a simmer, allowing the peas to cook until they begin to break down and get ‘soupy’. This will take approximately 30=45 minutes. Add the carrot and continue to simmer for another 30 minutes, or until the soup is a consistency that you like. Salt and Pepper to taste. Add the diced onion as a topping when served. Great with cornbread on the side!
