Split Pea Soup - TastyPlanner.com

This recipe doubles well (though you need a really big pot) and freezes OK too. When I have made this for my family there is usually fresh bread, and they often grill ham slices to accompany, but I think it’s fine by itself.
Ingredients
5 cups water
1 cup dried split peas
2 medium potatoes, peeled and chopped
3 cloves garlic, chopped or crushed
1 leek or 2 medium onions, cleaned and chopped
1 carrot, peeled and chopped
1/4 cup olive oil
1 tsp dried thyme
1/4 cup dried parsley (or 1/2 cup fresh)
1 tsp salt
freshly ground black pepper (to taste)
Instructions
1. Put water and split peas in a big pot and bring to a boil. Turn to low, put on the lid, and simmer for 1/2 hour.
2. Add the remaining ingredients (it will seem like there’s not enough liquid, but it’s OK, so long as it basically reaches to the top of the chopped ingredients.) Return to a boil on high, turn back down to a low simmer, and replace the lid. Cook for 45 more minutes.
3. Puree with a food processor or hand blender. (The hand blender works best.) Adjust consistency, if necessary (add water if it’s too thick).
