Ingredients
2 tablespoons olive oil
5 pounds red onions, thinly sliced
1 pound slender green beans, trimmed
1 teaspoon dried tarragon
1 pinch salt
Instructions
Trim the green beans, and cut the onion into thin strips.
Boil green beans until soft. While boiling the beans, saute the red onion in olive oil until soft and caramelized.
Drain the green beans and toss together with the onions, the tarragon, and a pinch of salt or salt to taste.
