Stir-Fried Asparagus w/ Maple - TastyPlanner.com

This is one of my favorite uses for asparagus

Ingredients
1 1/2 tablespoons soy sauce
1 1/2 tablespoons maple syrup
1 tablespoon dry sherry
2/ 1/2 tablespoons Peanut Oil
1 1/2 pound asparagus, tough end snapped off
3 medium garlic cloves (minced)
2 medium shallots (white & green parts, sliced thin)
Jasmine Rice (optional)
Instructions
Mix soy sauce, maple syrup, and sherry together in a small bowl.
Heat 2 tablespoons of the oil in a large heavy bottomed skillet over high heat until almost smoking. Add asparagus and cook stirring frequently until well browned, about 5 minutes.
Clear a space in the center of the pan, add the garlic & drizzle with the remaining 1/2 tablespoon of oil. Cook until fragrant, about 30 seconds, then mix with the asparagus. Add the soy sauce mixture and toss to coat the asparagus. Sprinkle with the scallions and serve immediately.
(I like to serve this as a main dish atop jasmine rice)
