Ingredients
1 Tablespoon Peanut Oil
5 Garlic cloves, peeled and chopped
1/2 Teaspoon sea salt
2 Bags spinach leaves (9-ounces)
1 Teaspoon sugar (optional)
Instructions
1. Heat a wok or large frying pan over high heat. Add peanut oil; swirl to coat the bottom. When very hot and slightly smoking, add chopped garlic and salt. Stir-fry for about 15 seconds.
2. Add spinach. Stir-fry for about 2 minutes, until the leaves are thoroughly coated with oil.
3. When spinach has wilted significantly, add sugar (optional). Continue to stir-fry for 4 minutes. Pour off excess liquid.
4. Transfer to warm plate.
