Stove-Top Macaroni & Cheese - TastyPlanner.com
Chef: Wayne Goode
Macaroni & Cheese made on the stove top. This is based on recipes from Joy of Cooking & Good Eats (which are remarkable similar). I have slighted simplified it (regular milk instead of evaporated milk) and made some other changes (onion powder, slightly less cheese).
Ingredients
8 oz (by weight) elbow macaroni
4 tablespoons butter
2 eggs
8 ounces milk
1/2 tsp salt
1/4 tsp onion powder
1/8 tsp black pepper
1/8 tsp Red Pepper
1/2 teaspoon dry mustard
8 oz (by weight) Cheddar or Colby cheese, shredded
Instructions
Cook macaroni according to box instructions. Drain and return to the pot. Set burner to low. Add butter and stir to melt and mix.
Combine remaining ingredients except cheese. Stir mixture into the pasta. Add the cheese in 3 parts and stir until milted. Continue to cook over low heat and stir until not watery but creamy.
Notes: If you are unsure about spicy food, you can use less red pepper until you see how it works. Some people may want more.
