Strawberry Cream Dessert - TastyPlanner.com

This recipe originally came from my mother. It was called Champagne Salad, I guess because it would go well with bubbly. Since I live in the land without Cool Whip, I made a whipped cream variation. Whipped cream doesn’t stand up as well over time as its chemical alternative, so I opted to freeze it with great results.

Ingredients
8 oz. creamed cheese, softened to room temperature
1/4 cup sugar
13 oz. can crushed sweetened pineapple, drained (add a bit more sugar if sweetened is not available)
10 oz. frozen strawberries with juice, thawed
1.5 cups thickened/whipping cream
1/2 cup powdered/icing sugar
1 tsp vanilla
12 oz Cool Whip for the cream, icing sugar & vanilla.)
Fresh strawberries & mint leaves to garnish (optional)
Instructions
1. With a mixer, whip cream together with icing sugar & vanilla until peaks form. Put in freezer or fridge to stay chilled.
2. Mix together cream cheese and sugar until well combined. Mix in fruits.
3. Fold whipped cream mixture into fruit mixture. Have a little taste to make sure it is sweetened to your liking.
4. Spread into 9×13 pan.
5. Optional, press 1/2 strawberry and 1 small mint leaf into each serving portion.
6. Freeze for at least an hour.
- You may want to take out of freezer a little bit before you intend to serve to make it easier to cut. I also like to wait a little before eating so that it’s more like an ice cream consistency instead of frozen solid.
- If using Cool Whip, this makes a nice sweet salad without freezing.
