Stuffed Mushrooms with Sausage - TastyPlanner.com

Stuffed mushrooms with a meat stuffing that has Italian sausage, green onions, garlic, and mozzarella and Parmesan cheeses.
Ingredients
2 pounds large fresh white mushrooms - ~40 - cleaned
2 tablespoons vegetable oil
16 ounces Italian sausage
1/2 cup sliced green onions
1 tablespoon minced garlic
2 teaspoon Italian seasoning
2 cup shredded mozzarella cheese
1 cup shredded mozzarella cheese - as topping
8 tablespoons grated Parmesan cheese
Instructions
1. Removed stems from mushrooms.
2. Finely chop stems and place in bowl.
3. Arrange mushroom caps on a shallow baking sheet.
4. Heat oil in a skillet over medium heat. Add sausage, green onion, garlic, Italian seasoning and reserved chopped mushroom stems.
5. Cook, stirring, breaking sausage into smaller pieces, for about 5 minutes, until cooked through. Removed from heat; add 2 cups mozzarella and the Parmesan cheese and stir until cheese melts.
6. Stuff mushrooms caps with the sausage mixture; sprinkle with remaining 1 cup mozzarella.
7. Bake 10 – 15 minutes, until mushrooms are tender.
