Stuffed zucchini boats
Ingredients
4 zucchini, cut in half lengthwise
6 tablespoons olive oil
2 onions, chopped
2 green peppers, seeded and chopped
1 pound lean ground beef
.5 teaspoon dried oregano
Instructions
Preheat the oven to 350 degrees. Place the zucchini halves into a pot of boiling water and cook until tender, 8 to 10 minutes. Drain, scoop out the center pulp to make boats, and retain the pulp. Discard any large seeds.
In a skillet, heat the oil over medium-high heat, add the onions and peppers, and cook, stirring, until the onions are golden brown, 5 to 7 minutes. Add the meat and cook, stirring, until browned, about 10 minutes. Stir in the oregano and zucchini pulp.
Place the zucchini boats into 2 large baking pans. Spoon the hamburger mixture into them. Bake for 45 to 60 minutes, until the tops of the boats are brown. Scoop out the contents of the zucchini boats, including all of the zucchini flesh, and transfer to a food processor or blender. Puree until you have achieved the desired consistency.
Restuff the boats for serving. Serve warm.
