Sun Dried Tomato Pesto Chicken - TastyPlanner.com

Italian chicken dish, easy prep, great for family night or company. Serve with broccoli and a side of pasta. If you like low fat, cook without the skins
Ingredients
8 Chicken thighs with bone and skin
1 small jar of Sun Dried Tomato Pesto Sauce
1 Tbs olive Oil
1/4 Cup Shredded sharp Italian cheese, like parmesan, asiago, or romano
Instructions
Pull up skins but leave them attached and place 2 tsp pesto and ½ tsp of shredded cheese between skin and meat of each thigh.
Brush skins with Olive Oil (can also use oil from the Pesto sauce to make things easy)
Place in ovensafe pan (do not cover). Bake for approx 45 mins at 400 degrees. (check often, and test to make sure it is done).
