Ingredients
4 Wheat buns, toasted/broiled
1 large onion, cut into rings
2 Red bell peppers, roasted & skinned
Brie Cheese wedge, remove rind and cut into strips
pesto
4 portobello mushrooms
balsamic vinegar
olive oil
garlic paste or crushed fresh garlic
salt and pepper
Instructions
Place bell peppers in oven and broil on high until the skin has black spots, keep turning until black spots cover the whole pepper. Remove and place into a ziploc bag. Once cooled, peel off skin, slice each pepper into 4 pieces and remove the seeds.
Cook the onions on medium heat until they are tender and lightly browned. Once onions are fully cooked, mix the bell peppers with the onions and place on low heat for the flavors to meld.
Wash mushrooms, and remove stems. We like to peel off the top skin of the mushroom to make it more tender, but it’s not necessary. Place mushrooms inside a bag or container with the marinade and let sit for at least 20 minutes, no more than a few hours. Cook mushrooms on a grill or in a pan until tender. Place brie on to melt.
Broil the buns until lightly browned and add pesto to both sides.
Assemble sandwich and enjoy!
