Sweet and Fingerling Potato Curry - TastyPlanner.com

Perfect light lunch for a chilly day! Potatoes are good for you, they contain vitamins and minerals that your body needs. for an even more nutritional punch and added fiber leave the skins on if you like them. I don’t care for them myself so I peel mine, even though they are good for you.
I have a similar recipe on here that calls for yukon gold potatoes, but wanted to add this one because it is a bit different and was really good!
Ingredients
1 Tbsp extra virgin olive oil
1 small sweet onion, diced
1 small sweet potato, cut into bite size pieces
1 lb red, yellow and purple fingerling potatoes, cut into bite size pieces
2 cup organic free range chicken broth
2 Tbsp curry powder
sea salt and fresh ground pepper to taste
Instructions
heat oil in medium sauce pain until hot. add onion and cook until translucent.
add potatoes and brown lightly.
add curry powder and cook until fragrant.
add sea salt and pepper, then add chicken broth just until potatoes are covered and about 1/2 inch is showing. cover and simmer until broth is absorbed and potatoes are cooked through. Serve immediately.
