Sweet Country Non-Dairy Corn Bread - TastyPlanner.com

A modified corn bread recipe that does not use milk or eggs. For a more healthy corn bread recipe.
If you prefer corn muffins, grease bottoms only of 12 regular size muffin cups, or place paper baking cups in muffin cups. Fill about 3/4 full.
1 ½ cups water
3 teaspoons Egg Replacer
¼ cup stick olive oil, margarine, or butter,* melted
1 ¼ cups yellow, white, or blue cornmeal
1 cup All-purpose flour**
¾ cup brown sugar
3 teaspoons baking powder
½ teaspoon salt
1. Heat oven to 400°. Grease bottom and side of round pan, 9×1 1/2 inches, or square pan, 8×8×2 inches.
2. Beat dry ingredients in large bowl. Add in remaining ingredients. Beat air into the batter after mixing the ingredients together. Pour batter into pan.
3. Bake 20 to 25 minutes or until golden brown and toothpick inserted in center comes out clean.
*Spreads with at least 65% vegetable oil can be substituted.
**If using self-rising flour, omit baking powder and salt.
