Sweet Potato Souflé - TastyPlanner.com

A little twist on the traditional sweet potato casserole. Light, fluffy & sweet.
5 pounds of Yams
1 cup of sugar
1/2 cup whipping cream
1/2 teaspoon of salt
1 1/2 stick of butter
1/2 teaspoon of vanilla
3/4 cup brown sugar
1/4 cup of flour
1 bag of marshmallows
1 bag of pecans (optional)
Preheat oven to 325
Boil yams until soft.
Drain and puree yams adding 1 cup of sugar, 2 eggs, 1/2 cup whipping cream, 1/2 teaspoon salt, 1/2 stick of butter, and the vanilla.
In a separate bowl mix 3/4 brown sugar, 1/4 coup flour, stick of butter, and the pecans.
When the second bowl is good and mixed, mix in with the first.
Cook in the oven for 30 to 40 minutes.
Place marshmallows side by side and put back in the oven until they melt.
