Easy and a favorite at our house
Ingredients
1 lb. ground beef
1/2 cup chopped onion
1 pkg of taco seasoning
4 oz (one can) o green chilies (drained)
1 1/4 cups milk
3/4 cup Bisquick
3 eggs
1 cup shredded Monterey Jack or Cheddar Cheese (or both)
Instructions
Preheat oven to 400 degrees and grease pie plate (10")
Brown beef and onion, then drain. Stir in seasoning mix.
Spread beef/onion in pie plate.
Top with chilies.
Beat milk, Bisquick and eggs until smooth. Pour into plate.
Bake 25 minutes.
Top with cheese and bake until knife inserted removes clean (another 8-10 minutes)
Cool for 5 minutes. Serve w/ sour cream, tomatoes, salsa and any other Mexican toppings.
