Tagliatelle with mushrooms and creamy sauce
Ingredients
2 oz butter
12 oz chanterelles or other wild mushrooms, well washed
1 tbsp plain flour
1/4 pint milk
6 tbsp Crème fraîche
1 tbsp chopped fresh parsley
10 oz fresh tagliatelle
Instructions
Melt butter in frying pan
Fry mushrooms for about 2-3 minutes over gentle heat until juices begin to run
Crank heat up and cook until the liquid has almost evaporated
Transfer mushrooms to bowl using slotted spoon
Stir in the flour, adding a little more butter if necessary
cook for about a minute
gradually stir in milk to make smooth sauce
Add the creme fraiche, parsley, mushrooms and seasoning
stir well
Cook very gently to heat through and keep warm while cooking pasta
Cook pasta in boiling water for about 3-5 minutes
Drain well, toss in a little olive oil
Pour the mushroom sauce over the pasta and eat immediately
