Tamagoyaki - sweetened Japanese omelet - TastyPlanner.com

Tamago is a sweetened omelet that is sometimes used for sushi and served over rice, or can be eaten separately cold for breakfast, or maybe reheated. There are videos on youtube to show how to make this. It is possible to make with a round pan, but you’ll hae to figure out how to roll it differently. FYI: I haven’t tried this recipe, yet.

Ingredients
4 eggs
4 tablespoons of mirin
4 tablespoons dashi or chicken stock
2 tablespoons of soy sauce (optional if using dashi)
2 tablespoons of sugar
1 tablespoon vegetable oil (optional for frying omelet)
*note* experiment with ingredients to taste, mix mirin, sugar, dashi, soy based on how sweet/salty you want it
Instructions
Beat eggs in bowl
Add other ingredients except oil and mix well
(optional) Heat oil in pan (preferably square)
(optinal) oil pan with paper towel to soak up oil (reserve towel)
add 1/4 of egg mixture to pan and cook as you would an omelet
cook until egg first layer has set
roll 1/3 from top to center of pan
roll 1/3 from bottom of pan to center
move first layer to the top
(optional) wipe rest of pan with reserved paper towel
pour 1/4 of egg mixture and lift first layer so some liquid falls underneath
when set, roll up as before
repeat for 2 more layers (wiping with paper towel if using oil)
take out of pan and let cool
cut cooled omelet into strips serve over rice as sushi
