Tequila-Lime Chicken - TastyPlanner.com

Spicy, tart, tangy and quick to prepare, this dish goes well with a pre-dinner tequila shot.
Ingredients
2 boneless skinless chicken breasts, cut into 1-inch pieces
1 shot tequila
3 medium limes, juiced
1/3 cup all-purpose flour
2 tablespoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/8 teaspoon ground red pepper (cayenne)
2 tablespoons of vegetable oil
Instructions
Combine flour and spices in a mixing bowl or plastic bag. Add chicken to flour mixture, tossing or shaking to coat thoroughly.
Meanwhile, heat oil in large skillet over medium-high heat. Add coated chicken to skillet, shaking off excess flour mixture. Cook approximately 8 minutes, turning chicken pieces halfway through. Add tequila to skillet, stirring to loosen drippings. Immediately add lime juice. Cook and stir until sauce is reduced and coats chicken pieces.
Serve over steamed rice.
