Tex-Mex Chicken & Rice Chili
Ingredients
1 pkg(6.8oz)Rice-A-Roni Spanish Rice
(2-3/4 cups) water
2 cups chopped cooked chicken or turkey
1 can(15 or 16 oz)kidney beans or pinto beans, rinsed and drained
1 can(14-1/2 oz)tomatoes or stewed tomatoes, undrained
1 mediume green bell pepper, cut int 1/2 inch pieces
(1-1/2)teaspoons chili powder
1 teaspoon ground cumin
1/2 cup(2oz)shredded cheddar or monterey jack cheese (optional)
Instructions
in 3 quart saucepan, combine rice-vermicelli mix, special seasonings, water, chicken, beans, tomatoes, green pepper, chili powder and cumin. bring to a boil over high heat
reduce heat to low; simmer uncovered, about 20 min or until rice is tender, stirring occasionally.
top with cheese and extras if desired
