Texas Egg Sandwich - TastyPlanner.com

This is an egg sandwich my mom made for me when I was little. My husband and I now enjoy our “Texas” version a few mornings each week for breakfast. It’s filling and a good balance of carb and protein (serve open faced) for folks who are looking to get their day off to a good start!
Ingredients
4 Slices of bread
4 eggs (2 eggs for a less filling breakfast)
2 slices of low-fat American cheese (or other variety)
2 tbsp light mayonaise
Salt and pepper to taste
1 tbsp Smart Balance (or other variety) butter/olive oil blend
Instructions
1. Lightly toast bread. Melt butter in skillet while bread is toasting.
2. Place each slice of cheese on one piece of toast.
3. Spread mayo on the other pieces of toast.
4. Cook eggs in skillet. We prefer them cooked “over medium” with the whites cooked but the yolks runny.
5. Place cooked eggs on the toast with cheese.
6. Salt and pepper eggs to taste.
7. Top the sandwich with the remaining toast slices.
8. Enjoy!
