12 jalapeño peppers
6 bacon strips
1/2 pound Monterey jack cheese
12 toothpicks
Instructions
Take the jalapeños and cut off the tops then scoop out the insides and seeds. Slice the monterey jack cheese in to strips that will squeeze in to the jalapeño pieces.
Cut the bacon strips in half and use it to wrap the jalapeño all the way around and secure together with a toothpick.
Place them on a grill in your favorite state-of-texas shaped grill holder and cook for 15 to 20 minutes or until the bacon looks done on the outside.

These are great. I usually use cream cheese, but these look just as good. I’ll try it with the Monterey Jack next time.
Yummy. I make mine with cream cheese, too, and cook them in the oven rather than on the grill. I have found that if you bake them in the oven, for Non-Texans you can use half a jalapeno :)!
We just made them tonight, and I thought they came out rather good. The peppers lose a bit of their heat when you cook them.
But we used pepper jack, and cooked them in the oven on 375…we liked them.
We are gonna try for cream cheese next time.

I make these a week ago. They were delicious. Make sure to remove all the seeds of the pepper if you would like to tame the heat a bit.
Great recipe, I had to finish them in the oven though, and had problems with the cheese running out. It was a little spicy for some of the guests but us guys loved them.
