Is a traditional Maharashtrian (India) dish – a bit spicy but very tasty.
To give you more idea, it is a kind of pancake; but not exactly one.

Ingredients
1 medium size bottle gourd
7 green chillies - medium spicy (reduce if you cannot handle spice)
4 Cloves of Garlic
1 TBSP ginger paste
2 cup wheat flour
1 cup gram flour
1 cup of fresh coriander leaves
salt to taste
water
oil for shallow frying
Instructions
1. Roast wheat flour and gram flour separately in a heavy bottomed pan till brown. Mix both in a bowl.
2. grate the bottle gourd and add to the mixture of flours
3. grind chillies, garlic and ginger together. Add this paste to mixture.
4. Chop coriander leaves coarsely and add to mixture
5. Add salt to taste
6. Add water to get a soft dough out of mixture. Make sure it is soft enough BUT NOT of pouring consistency
7. On a cold dry pan, put 1 tsp of oil at center and spread it on the pan so oil enough area for this pancake.
8. Take handful of the dough and place it in the centre of pan. Now start pressing it by ur fingers, spreading it in all directions to get a flat approx 5 mm thick pancake.
9. Make 5 holes in the pancake – one in the centre and 4 on the edges in 4 directions. Put some oil in these holes. Cover the pan and let Thalipeeth cook.
10. After a couple of minutes, when you hear sound of frying, take off the pan lid and change side of pancake. Add some more oil over the edges and let it cook without lid. Keep changing sides till you get a crispy Thalipeeth.
11. Before you make the next one, hold pan under cold water and wipe it with a cloth. Repeat from 7.
Serve with – yogurt + salt + pepper
