Ingredients
1 lb sausage (I like either Jimmy Dean's Hot Sausage or Neese's Hot Sausage)
1 cup yellow onion, minced
3/4 cup celery, minced
1 1/2 lbs mushrooms (optional)
1 package Pepperidge Farm Herbed Stuffing Mix or Cornbread Stuffing Mix
2 tsp poultry seasoning (or 3/4 tsp each sage, thyme, and marjoram)
1 1/2 tsp salt
1/4 cup minced parsley
2 eggs, beaten
2 cups water chestnuts, minced
1 cup chicken broth (adjust for preferred moisture)
Roasted chestnuts (optional)
Instructions
Brown sausage in heavy skillet, breaking up with a fork, until cooked through. Transfer sausage with a slotted spoon to a large bowl. Saute onions, celery and mushrooms until onions are translucent. Add to bowl along with remaining ingredients. Mix well and transfer to casserole dish. Bake at 325 degrees for 1 hour.
