This is my version of Tilapia Orgenata adapted from a recipe I found on Don’t Burn the Garlic’s Blog.

Ingredients
4 fresh tilapia fillets
1/2 Cup panko bread crumbs
1/4 Cup Seasoned Bread Crumbs
1/2 Parmesan cheese
minced garlic
1 tsp dried oregano
1/2 tsp garlic powder
2 Tbsp extra virgin olive oil
1/2 Cup white wine
1/2 fresh lemon, juiced
4 Tbsp butter, melted
1/8 tsp kosher salt
1/2 tsp black pepper
Instructions
1. Dry fillets and sprinkle minced garlic to your desire.
2. Drizzle oil into Pyrex. Pour wine into Pyrex
3. Place fillets in Pyrex
4. Combine dry ingredients and stir
5. Add lemon juice and oil to crumbs and stir so that mixture is crumbly NOT pasty
6. Lightly pack crumbs onto fillets
7. Drizzle melted butter over fillets
8. Bake uncovered in a 350F oven for ~25mins. Check after ~15mins. When fish is cooked the flesh will flake when pulled with a fork.
