Ingredients
1 medium potato
1 tsp olive oil
italian seasoning, basil, or oregano
1 tbsp seasoned bred crumbs
1/2 tsp blackened seasoning
1/4 cup tomato salsa
1/4 cup chopped pineapple
1 cup sugar snap peas
8oz tilapia
Instructions
Cut potato into quarters, brush lightly with olive oil and sprinkle with seasoning, basil, or oregano; bake at 350F for 30min. Sprinkle tilapia with bread crumbs and blackened seasoning and broil for 10 minutes. Mix tomato salsa with pineapple and spoon over tilapia. Serve with potato wedges and steamed snap peas.
