Can be served with tomato sauce and pasta or stand alone…wonderful for family style meal preparations. Recipe adapted from Thomas Keller’s AD HOC at Home cookbook.

Ingredients
2.5 lbs ground meat (use a variety of beef and pork cuts)
chopped onion
chopped garlic
salt / pepper
Bread crumbs
1 egg
fresh mozzarella
Instructions
heat oil in a pan and simmer onion and garlic until onion is almost translucent. Season with salt and pepper. Remove from heat
Combine garlic, onion, ground meat, bread crumbs and egg. Mix gently until all ingredients are combined.
Slice Mozzarella and create meatballs sized to your liking with the mozzarella in the center.
Place a cooling rack on top of a baking sheet. Place your meatballs on the cooling rack and bake for about 20mins on 425. Let meatballs rest before combining with pasta or sauce.
