Tomato Tortellini - TastyPlanner.com

2 (9oz)packages refrigerated low-fat cheese tortellini or ravioli
1 1/2 pints cherry tomatoes
1/2 tsp. salt
1/4 tsp. black pepper
2 Garlic Cloves, finely chopped
1/2 cup crumbles low-fat feta cheese
1/4 cup fresh basil leaves, torn.
1. Preheat the oven to 500 oF. Cook the pasta according to the package directions, omitting the salt if desired.
2. Meanwhile, mix the tomatoes, salt, and pepper on a large rimmed baking sheet; spray with nonstick spray. Roast until the tomatoes are softened and the skins blister, about 5 minutes. Stir in the garlic.
3. Drain the pasta and transfer to a large bowl. Stir in the tomato mixture, cheese, and basil.
