Tuna Noodle Casserole - TastyPlanner.com

Tuna and noodles. Yum.

4 tbsps butter
3/4 cup mushrooms, thinly sliced
1/4 cup red or green bell pepper
1/4 cup onion, chopped
1/4 cup all-purpose flour
2 1/2 cups milk
1 cup grated cheddar cheese
2 6oz cans White tuna
2 cups egg noodles, cooked
1/4 cup parsley, minced
Salt and pepper to taste
1/2 cup bread crumbs, dried
2 tbsps butter
Pre-heat oven to 375
Butter a 2 quart baking dish
In a saucepan over medium heat, melt 4 tbsps butter. Add mushrooms, bell pepper and onions. Stir 5 mins until vegetables are tender.
Add 1/4 cup flour. Cook for 1 min.
Remove from heat. Whisk in 2 1/2 cups milk.
Return to heat. Whisk until sauce boils. Reduce down for 10 mins.
Remove from heat. Add, and whisk until melted cheddar cheese. Stir in tuna. Add noodles, parsley, salt and pepper. Stir well. Pour into baking dish.
In a separate bowl, mix together bread crumbs and melted butter. Sprinkle over top of casserole.
Bake until bubbly and browned – 25-35 mins.
