Easy, fast, tasty pasta
Ingredients
16 ounces rotini pasta
4 skinless, boneless chicken breast halves, cut into bite size pieces
4 tablespoons olive oil
3 cloves garlic, minced
1/4 teaspoons salt
1/4 teaspoons garlic powder
1/4 teaspoons dried basil
1/4 teaspoons dried oregano
1 cup chopped sun-dried tomatoes
1/4 cup grated Parmesan cheese
Instructions
1. Cook and drain pasta as directed.
2. While pasta is cooking, in a 5-quart pot, heat olive oil and saute chicken, garlic, salt, garlic powder, basil, and oregano until chicken is cooked. Add sun-dried tomatoes and cook for two minutes.
3. Remove from heat and toss with pasta. Serve with grated Parmesan cheese if desired.

I made this with real dried tomatoes and minced garlic from a jar. It was good, but I think sun dried tomatoes in olive oil would have been much easier in this recipe.
I used a whole wheat pasta and turkey tenderloin as a great healthy choice for this dish.
This was recommended to me by Josh for a nice lunch.
We used the default call for chicken even though Josh mentioned using Turkey as a healthy alternative.
Followed the recipe to the letter. It was fast and easy. My 2 year old daughter loved it. As for my wife and I it was good, but not fantastic. The nice thing about the recipe is that changes are easy. A great Thursday meal when you don’t feel like doing anything crazy.
